Our Oils: Excellent even after 12 months
Every year we have our monovarietal oils analysed by Assam. For the 2019 harvest we did a further check, we had the oils analysed in November 2019, immediately after the pressing, and we had them analysed 12 months later. The results are beyond all expectations: we have only small losses from the olfactory point of view while bitter and spicy remain unchanged for Arancino and Frantoio oils. Global ratings remain for all oils over 70 /100, like a good oil fresh out of the mill. Assam not only manages the national database of Mono-Varietal oils with their recognizable organoleptic characteristics, but also organises the Italian review of Mono-Varietal Oils and is also an Accredia certified analysis laboratory.

Merum is one of the most important Olive Oil Guide for the German- speaking countries . We are proud and happy for this new appreciation, but our path to qualitative growth is just to the beginning.
